The Coop Chicken & Waffles, a mobile truck serving fresh fried chicken and Belgian waffles, is making a name for themselves in Pittsburgh with their new business.
Justin Fitzgerald and Nicoletta Cardilli started the concept and their first truck launched this past fall. Their basis, fresh soul food, has quickly become a popular spot for Pittsburgher’s.
“We have one rule in the truck,” Fitzgerald told goodfoodpittsburgh.com. “Nothing frozen. We’re only using fresh chicken that’s been marinating in buttermilk for 24 hours, then coated with our special flour mixture, and fried to order.”
Their menu features fried chicken wings, fried chicken tenders, hand-cut waffle fries and, of course, Belgian waffles.
The Coop Chicken & Waffles also features a rotating dessert menu that offers sweet waffles that change with the seasons. Depending on the time of year guests can be treated to a bevy of different dessert waffles, including pumpkin and stuffed apple waffles.
One particular dish from the truck has become a hot commodity in the city. Fitzgerald’s Chicken Waffle dish has quickly become the truck’s most popular dish. It features fried chicken tenders baked directly inside a Belgian waffle.
Although the two partners have worked extremely hard to bring this concept to fruition, Fitzgerald credits his mother, and her homemade fried chicken and waffles, for the idea.
“When I got back to Pittsburgh, my mom sent me her recipe, and we tried to make them,” Fitzgerald said. “We loved the combination, and we decided to get a food truck and make it happen.”
